This is the story of the “step-by-step” development of an Anatolian culinary custom known as Karsambac (snow mix).

Karsambac is created by combining fruit extracts with layers of snow that have been maintained on slopes and valleys by being covered with leaves and branches during the sweltering summer months. Over time, this concoction was enhanced with additional ingredients like milk, honey, and salep to create the well-known, distinctive flavor we know today.

In addition to this 300-year-old history, the temperature and geology of the region where Mado Ice cream is made are what give it its unique flavor. This distinct flavor is produced by combining schlep that is harvested from the same region with milk from animals that are fed thyme, milk vetch, and orchid blooms on the high plateaus on the hillsides of Ahirdagi. Maras Ice-fruit cream’s varieties are all prepared using only natural ingredients, such as fresh cherries, lemons, strawberries, oranges, and other fruits.
