Job Description for Chef De Partie (CDP)

Position: Chef De Partie (CDP) Location: Al Khoory Hotel Dubai


  1. Assist the Sous Chef, and Head Chef in food preparation and cooking according to standard recipes and specifications.
  2. Oversee a specific section of the kitchen, such as sauces, grill, pastry, or seafood, ensuring all dishes are prepared to the highest standards.
  3. Train and mentor junior kitchen staff, including commis chefs and kitchen assistants.
  4. Monitor stock levels and place orders for ingredients and supplies as needed.
  5. Ensure the cleanliness and organization of the kitchen area, adhering to food safety and hygiene regulations.
  6. Maintain accurate records of food production and wastage.
  7. Collaborate with other chefs and kitchen staff to plan and execute menus for various dining outlets.
  8. Handle food preparation and cooking during busy service periods, ensuring timely and efficient delivery of dishes.
  9. Assist in menu development and contribute creative ideas for new dishes.
  10. Adhere to all company policies, procedures, and standards, including health and safety regulations.


  1. Proven work experience as a Chef De Partie or similar role in a hotel or restaurant kitchen.
  2. Culinary diploma or degree from a recognized culinary school is preferred.
  3. Strong knowledge of culinary techniques and international cuisines.
  4. Excellent leadership and communication skills.
  5. Ability to work well under pressure in a fast-paced environment.
  6. Attention to detail and creativity in food presentation.
  7. Flexibility to work in shifts, including weekends and holidays.
  8. Food hygiene and safety certification is required.
